I've seen some show on tv on how its made years ago. I thought it was interesting.
The duck is first drenched in boiling water to tighten the skin. Its then dipped in a liquid mixture of "five spices" and raw brown sugar. Then its blown up with air and sealed with string to retain its shape and moisture. Then set in the fire oven to roast until crispy.
