Arroz Caldo is from the Spanish term Arroz meaning rice, A popular dish especially early morning in the streets of Manila and the Philippines it had a different taste from the regular Chinese Congee.

Never mind if you have a chance going back to the Philippines,You could eat everthing that Ek-ek have been posting here.

I have also seen a lot of foods stuffs that Ek-ek had posted in the Chinese chat.

Ooh yeah I love that stuff. I like to eat it with rice though. embarassedlaugh.gif So I can get an healthy dose of vitamin R.

Why not make it at home. Its really easy. I know how to make Lugaw. Lugaw is what we call it here. it was already there before th spanish came. wasnt it? When tehy came they just called termed it in their language. Just like they gave a spanish name for Canton Fried rice in the philippines or something...They usually have it at the asian store. Instant Lugao...hehehe sarap, pero lugao na sariwa mas masarap heheheh

Yong malagkit na rice na may kulay at may halong pieces of meat and hotdogs and green peas... i'm not sure if it was cooked first then fried or cooked like ordinary rice tapos hinaluan na lang... biggrin.gif

Here is a recipe:
Arroz Caldo

Note: This recipe is from Reynaldo Alejandro's Philippine Cookbook available at The Filipino Book Barn
3 tablespoon vegetable or corn oil
2 tablespoon minced garlic
1/4 cup chopped onion
8 1/2-inch slices of ginger
1 2 - 3 1/2 pound chicken, cut into serving piecies
4 tablespoons patis (or 2 tablespoons salt)
6 cups water
2 cups uncooked rice
1/4 cup chopped scallion
1/4 teaspoon freshly ground pepper

In a large covered stockpot, heat oil and saute garlic, onion and ginger. Wait for the garlic to turn brown and onions become transparent. Add the chicken and patis or salt. Cover and let simmer for 5 minutes. Chicken will produce its own juices. Add water and rice. Stirring often to prevent sticking, simmer for 25 minutes over low heat or until chicken and rice are tender. Add chopped scallion and pepper before serving.

I also like to add fresh lemon, lime or calamansi juice before eating.


But in the Philippines the Arroz Caldo is a little bit of yellowish.
They add kasugba? Safron?

black beans were never really a common food in the philippines. Since malagkit is used for desserts alot, it makes sense to add raisins to it if made into lugaw. Sounds like rice pudding to me.

I only know some filipinos add raisins in spaghetti pukeface.gif, but with aros caldo?

yup, raisins in "arroz caldo valenciano". Ive never tried it myself but Ive scene it. hehehe

biggrin.gif Thats the only thing I don't like about Valencia the rasins. I always pick it out when I eat it. Rasins and rice don't mix.

Raisins? In ordinary Arroz Caldo.

Filipinos do not put Raisins in Arroz Caldo.

They put chooped spring onions, fried garlic and onions as toppings

i like lugaw with chicken flavor and chicken feet with it, or hte beef flavor with the beef tongue and soft beef meat, or the pork flavor with isaw in it. i also like tokwat baboy or just tokwa or those big lumpia with vinegar sauce or something. that's good during the cold rainy days.

mm... lugaw... i like duck lugaw... chinese style lol... i hate it when my mom cracks an egg into it though.. i hate egg...

haha yea, once i was eating something (can't remember) and i bit a piece of luya, but i didn't know it was luya so i just kept on chewing on it, an then when i noticed the taste i spat it out... it was so wrong...

it does ruin the arroz caldo...I dunno why they even put it there....annoying when it does look like a chicken or they chop it into very small pieces!

arroz caldo is so easy to cook.. those by the book are for people who do have time to cook without having their stomachs complain! lol i usually just make lugaw then add a boiled egg, chicken soup bits and pounded black pepper. u could add a pinch of salt to add some flavor and voila, i have my very own instant Jt's Arroz Caldo. haha really.. ginger makes it better too! especially when the rains come.

another food good for the rainy days is the La Paz Batchoy and Pancit Molo. i used to eat those when i lived in Iloilo City for 4 years.. yum yum. my mouth's watering right now. haha i guess i'll cook myself pancit canton with scrambled egg with hotdog.. and it's 830 in the evening/
