I love it as well, and the bottle is sooooo cute - I only wish it was made out of glass, so that I can keep it forever.

I tried to make the spicy sauce for sushi. And if I recall correctly, to some best food mayo, I just added sugar to sweet it up and some rice vingegar for a bit more kick. The end result had a slightly different taste from teh sushi restaurants, but not quite the same.
Verdict: This stuff is cannot be substituted. I speculate it has a secret ingredient like whale semen. Pretty hard to beat.

I'd prefer the regular "garden variety" ones, as the Japanese mayonnaise's a bit bland, imo.

Japanese mayonnaise to me is not that strong so I actually do like it more than American mayonnaise.

I just picked up a bottle from a brand called Kenko and it's good. What I noitce about the flavor is the vinegar is like apple cider/rice wine. And it has a strong msg-like taste to it. Interesting there is no sugar at all and no carbs. I just wish it had more tang though, I like it that way...

Try adding sriracha to the sauce. Sriracha is part of the ingredient in a California roll.

I have avoided mayo like the plague, especially after making it from scratch once and being thoroughly grossed out. I was raised on Miracle Whip which had more vinegar.
But Japanese mayonnaise is a whole other issue. Its one of my guilty pleasures now that I have a roommate that insists on keeping it in the house. Usually get Kewpie brand, just because I know a sushi chef that uses it, but there are other comparable brands.
The difference? The distinct eggy flavor, instead of oily like Helman's.
