I think you can try herbs first (like ngò or rau răm). They're small and from what I heard very easy to grow. You can grow them in a pot so that you can bring them inside if you want to (not that you have to, but at least you have the option to).
I'm not sure about fruit-bearing plants. I assume you don't want cold-climate plants, since you can easily buy them at the market. I think it is possible to grow tropical climate plants for example cam, chanh, ổi, they'll usually survive the cold spell (especially if you take care of them when it's too cold). But if it's too cold for too long I'm not sure if they can bear fruits or not.
I'm sure some has done this/thought about it before. Try checking some other websites (even non-Vietnamese ones).
