i wonder what traditional knifemaker is called "the best" in japan.
i have a Kobayashi yanagi. (quite expensiv but not grindet to perfection)
we can order mizuno-tanrenio, watanabe, aoki....
WHAT KNIFE - "MAKERS", KNIFES ARE USED FROM THE BEST SUSHI-MAKERS?
IS THERE A ABSOLUT VERY BEST?
